Arone’s Spaghetti Sauce

This is an Esler family favorite handed down for 3 generations. It is authentic Italian spaghetti sauce reportedly with roots to the Mob. Don't expect Prego or Ragu. This is the real thing. Throw in some Italian sausages or my Authentic Italian Meatballs (see recipe) during the last hour of simmering for extra flavor!

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion diced
  • 2 cloves garlic minced
  • 2 46 ounce cans tomato juice
  • 1 small can tomato paste
  • 2 tablespoons dried parsley flakes
  • 1 teaspoon celery seed I use a scant teaspoon
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 tablespoons sugar
  • 1 teaspoon oregano
  • 1 teaspoon basil
  • 1/4 teaspoon ground red pepper (cayenne)
  • sliced mushrooms optional
  • 2 tablespoons Parmesan cheese

Instructions

  • Saute onions and garlic in olive oil. Add the remaining ingredients minus the Parmesan cheese and simmer on low for 3+ hours, until the right consistency is reached. I find that if you simmer (or reduce) too long, the sauce concentrates and can be to heavy. Decide when it reaches the consistency and flavor that is best for you.
  • Right before serving, add the Parmesan cheese and mix well.
