Cevapi with Kaymak

Cevapi with Kaymak
A family favorite made with lamb, beef, and pork. But don't skip the Kaymak. It is crucial. Serve grilled with Somun bread, diced onions, and Kaymak (recipe below) for an authentic Bosnian meal. This make a log of cevapcici. I like to use half and freeze the rest for another day. You can buy Somun at a Bosnian market or find a recipe online.

Ingredients
Cevapcici
- 1 pound ground pork
- 1 pound ground beef
- 1 pound ground lamb
- 1 egg white lightly beaten
- 4 cloves garlic minced
- 1 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons ground black pepper
- 1 teaspoon cayenne pepper optional
- 1/2 teaspoon ground paprika
Kaymak
- 1/2 cup feta cheese
- 1 cup sour cream
- 1 cup cream cheese room temperature
Instructions
Cevapcici
- In a large bowl, combine all ingredients and mix well with bare hands. Form into finger length sausages about 3/4 inch thick. Freeze for later use or grill sausages until cooked through. Serve with Kaymak, diced onions, and fresh, warm Somun bread.
Kaymak
- Beat all ingredients together until smooth. Refrigerate to let flavors develop. Bring to room temperature before serving.
