Tabouli
Spelled Tabouli or Tabbouleh, either way, this healthy dish features lots of fresh parsley. This recipe calls for bulgur which can be hard to find. I usually substitute couscous with great results. This side is great served with warm pita, humus, and babganoush. Add some chicken kebabs for a classic ME meal. It is often better the second day when the flavors have fully developed.

Ingredients
- 1/2 cup uncooked bulgur or fine couscous prepare according to instructions
- 1/3 cup fresh lemon or lime juice I prefer lime
- 1/2 cup green onions chopped
- 1/2 tablespoon dried mint fresh mint is even better if you have it
- 2-3 roma tomatoes diced
- 1/3 cup extra virgin olive oil
- 2-3 cups fresh parsley chopped
Instructions
- Cook the bulgur or couscous according to package directions and set aside.
- Add all ingredients together and mix well. A common mistake is to add too much couscous. So mix all other ingredients and then add the couscous little by little to your liking. The main ingredient you should see is the parsley and not the couscous. Adjust to your own liking.
