Marshmallow Graham Cracker Bars

Marshmallow Graham Cracker Bars.
I grew up on these. They are my all time favorite. Please try them.
Servings: 12
Ingredients
- 1 cup brown sugar
- 2 eggs beaten
- 3/4 cup butter
- 1 teaspoon vanilla
- 2 1/4 cups graham cracker crumbs
- 2 cups miniature marshmallows
- 1/2 cup flake coconut
- 1/2 cups chopped walnuts optional
Topping
- 6 ounces butterscotch chips (1 cup)
- 1/2 cup creamy peanut butter
Instructions
- In a medium saucepan, cook sugar, eggs, and butter on low heat for 5 minutes taking care not to scorch the eggs.
- Cool slightly and add remaining ingredients. Press into a 9 x 13 pan and set aside while you prepare the topping.
- Melt on low heat the butterscotch chips and peanut butter until creamy and smooth. While still warm, spread over the base.
- Let the topping set up before cutting. These are best stored in the refrigerator.
