Mama’s Chili

Mama’s Chili
I haven't won any chili cooking competitions but I think I could with this recipe.
Servings: 8
Ingredients
- 2 pounds ground beef
- 1 large onion diced (about 1 1/2 cups)
- 4 cloves garlic minced
- 2 tablespoons chili powder
- 1 teaspoon salt
- 2 teaspoons ground cumin
- 2 teaspoons dried oregano
- 2 teaspoons cocoa powder
- 1/2 teaspoon red pepper sauce
- 2 cans diced tomatoes (16 ounces each)
- 2 cans kidney beans undrained (sometimes I substitute a can of black or pinto beans)
- 1 cup chicken broth
Instructions
- Brown ground beef in a large soup pot until mostly browned. You can drain any fat if you like at this point.
- Add the onions and garlic and cook for another 3-5 minutes or until the onions become translucent.
- Add all the spices and cook for a minute to let flavor develop.
- Add the chili sauce, beans and tomatoes and mix well.
- Add all or some of the chicken broth to reach your desired consistency. I do not like my chili too thick.
- Simmer for 20 minutes.
- Serve with your favorites toppings and corn bread. I love diced onion, sour cream, and grated cheese.
