Mama’s Chili

I haven't won any chili cooking competitions but I think I could with this recipe.

Ingredients

  • 2 pounds ground beef
  • 1 large onion diced (about 1 1/2 cups)
  • 4 cloves garlic minced
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons cocoa powder
  • 1/2 teaspoon red pepper sauce
  • 2 cans diced tomatoes (16 ounces each)
  • 2 cans kidney beans undrained (sometimes I substitute a can of black or pinto beans)
  • 1 cup chicken broth

Instructions

  • Brown ground beef in a large soup pot until mostly browned. You can drain any fat if you like at this point.
  • Add the onions and garlic and cook for another 3-5 minutes or until the onions become translucent.
  • Add all the spices and cook for a minute to let flavor develop.
  • Add the chili sauce, beans and tomatoes and mix well.
  • Add all or some of the chicken broth to reach your desired consistency. I do not like my chili too thick.
  • Simmer for 20 minutes.
  • Serve with your favorites toppings and corn bread. I love diced onion, sour cream, and grated cheese.
