Pico de Gallo

Pico de Gallo
We love Pico de Gallo served next to guacamole and chips for any appetizer or side. I believe the secret is finely dicing the onions, tomatoes, and jalapeno. You want a little of everything in each bite! Make the Pico first and add a few spoonfuls to your avocados and your guacamole is ALMOST done.
Servings: 4
Ingredients
- 1 large onion finely diced
- 4 Roma tomatoes diced
- 1/2 bunch cilantro chopped
- 1 jalapeno seeded and finely chopped
- 1/2 fresh lime juiced
- salt to taste
Instructions
- Mix together roughly equal amounts of diced onion, tomato, cilantro (I like slightly less cilantro). Remember to remove the seeds and stem from the Roma tomatoes and dice the flesh and skin.
- Finely dice the jalapeno removing and discarding the seeds. Add to the onions, tomatoes, and cilantro.
- Add the lime juice and salt to season.
- Serve immediately or let flavors develop in the refrigerator before serving.
- This last 1-2 days in the refrigerator. Serve on enchiladas, eggs, or whatever suits you.
