Nanaimo Bars

This is my favorite dessert/bar hands down. Did I say this about Marshmello Graham Cracker Bars? Okay! It is a toss up. But if you are a portion Lenz, you will love these. I grew up enjoying these but we called them "Prayer Bars". I had long since forgotten them until we moved to Canada and discovered them once again under the name "Nanaimo Bars"! So good! If you have Canadian friends, please make and serve these and you will be a rock star. But… you must have "custard powder" which is difficult, though not impossible, to come by.

Ingredients

Bottom Layer

  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/3 cup cocoa
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 1 cup flake coconut
  • 1 3/4 cup graham cracker crumbs
  • 1/2 cup chopped walnuts (optional)

Middle Layer

  • 1/4 cup butter
  • 2 tablespoons custard powder
  • 2 tablespoons milk
  • 2 cups powdered sugar sifted

Top Layer

  • 2 squares semi-sweet chocolate
  • 1 tablespoon butter

Instructions

Bottom Layer

  • In a sauce pan, cook butter, sugar, cocoa, vanilla, and beaten egg over low heat, stirring constantly, until mixture begins to thicken.
  • Remove from heat and stir in coconut, graham cracker crumbs, and nuts.
  • Pat mixture into a greased 9 inch square cake pan. Chill for at least 1 hour.

Filling

  • Cream butter, custard powder, and milk. Gradually beat in powdered sugar, adding 1 teaspoon of milk if necessary to make a smooth spreading consistency.
  • Spread over first layer in pan. Chill until firm.

Top Layer

  • Heat chocolate and butter on low heat, stirring until smooth and completely melted. Spread over filling. Chill until set.
  • Cut in small squares and serve. Refrigerate uneaten portion.
