Split Pea Soup

This is the perfect dish to make with leftover Easter ham. You have to like split peas and if you do, ooh baby, you will like this.

Ingredients

  • 1/4 cup butter
  • 2 cups onion chopped
  • 1 cup celery diced
  • 1 cup carrots diced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper
  • 2 cloves garlic minced
  • 1 pound dried split peas rinsed
  • 1 meaty ham bone
  • 1 large bay leaf
  • 2 teaspoons fresh thyme leaves or the equivalent in dried
  • 6 cups chicken broth
  • 2 cups water
  • 1 cup ham diced

Instructions

  • In a large pot over medium heat melt butter. Add onion, carrot, celery, salt and pepper. Cook until vegetables are tender or just beginning to brow.
  • Add garlic and cook a minute longer.
  • Stir in chicken stock, water, ham bone, bay leaf, thyme, and split peas. Bring to a boil and reduce heat and simmer for 60 minutes or until peas are tender, stirring occasionally.
  • Stir more occasionally as soup begins to thicken. Add diced ham towards the end. Add additional stock or water to your preferred thickness.
  • Add salt and pepper to your taste. Enjoy.
