Chocolate Pot de Creme

This easy yet elegant dessert will impress any chocolate lover.

Ingredients

  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups whole milk
  • 1 1/2 cups heavy cream, separated
  • 6 large egg yolks
  • 5 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 tablespoon powdered sugar

Instructions

  • Place the chocolate chips in the blender.
  • Whisk together the milk, 1 cup of heavy cream, egg yolks, granulated sugar, and salt in a heavy a heavy-bottomed saucepan over medium heat. Cook, stirring constantly until the mixture thickens and is almost boiling. (5-6 minutes)
  • Immediately pour the milk mixture over the chocolate chips in the blender and blend until smooth, stopping to scrape sides of the blender as needed.
  • Pour into 6 ramekins, cover with plastic wrap, and refrigerate until set, about 2 hours.
  • Whip the remaining 1/2 cup of heavy cream with the powdered sugar until soft peaks form. Top the chilled pots de creme with whipped cream, garnish with chocolate, and serve.
