Grilled Prime Rib

This recipe was used for an 8-pound rib roast prepared for a kamado style grill.
Course: Main Course

Ingredients

  • 1 tablespoon salt
  • 3 tablespoons meat rub (your choice)
  • 1/2 cup garlic, minced
  • 1/2 cup butter
  • 2 tablespoon thyme
  • 2 tablespoon rosemary
  • 1 tablespoon black pepper

Instructions

  • This is a dry brine. Rub roast with salt, put on a wire rack and place it in the refrigerator. This must be done 24 hours prior to grilling.
  • Mix the rest of the ingredients for the butter/rub/spices mixture. 2-4 hours prior to grilling, spread this mixture over the entire surface of the roast and let stand at room temperature until ready to grill.
  • Cook in the kamado grill at 350 degrees, at 15 minutes per pound. The grill may have a handful of smoke chips, but you are not really smoking this, but cooking it. Maintain the temperature at 350 degrees for the duration of the cook. The internal temperature when done should be 120 degrees.
