Classic Humus

Easy Humus
Super creamy and yummy – like that served in Israel.
Servings: 8
Ingredients
- 3 cups cooked chickpeas, canned
- 1-2 cloves garlic
- 3-4 ice cubes
- 1/3 cup tahini paste
- 1/2 teaspoon kosher salt
- Juice of 1 lemon
- hot water (if needed)
- Extra virgin olive oil
Instructions
- Drain and rinse chickpeas.
- To peel chickpeas, canned or cooked, cover in hot water and add 1 1/2 teaspooon baking soda. Leave for a few minutes. Take a handful of chickpeas and rub under running water to remove the skins. Placed peeled chickpeas in a bowl. This extra step results in creamier humus but is not necessary.
- Add chickpeas and minced garlic to the food processor. Puree until smooth, powder-like mixture forms.
- While processing, add ice cubes, tahini, salt, and lemon juice. Blend for about 4 minutes or so. Check, and if the consistency is too thick still, run processor and slowly add a little hot water. Blend until you reach the desired silky smooth consistency.
- Spread in a serving bowl and add a generous drizzle of EVOO and a splash of fresh lemon juice. Add a few chickpeas and a sprinkle of sumac on top. Enjoy with warm pita and your favorite veggies.
