Cowboy Caviar

There are lots of versions of this dish, but this is my favorite. The fresh lime juice, honey, and chili powder give this a fresh taste with a little kick. I like to make ahead and add the fresh avocado just before serving. You can serve as a side, but I like to serve with tortilla chips.

Course: Appetizer, Miscellaneous, Side Dish
Servings: 8

Ingredients

  • 15 ounces black beans, rinsed and drained
  • 15 ounces black-eyed peas
  • 15 ounces corn (I prefer frozen corn)
  • 1 red pepper, diced
  • 1 jalapeno pepper, finely diced
  • 3/4 diced red onion
  • 2 avocados, diced

Dressing

  • 1/4 cup fresh lime juice
  • 2 tablespoons red wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon honey
  • 1/4 teaspoon chili powder

Instructions

  • Combine dressing ingredients. Mix well and set aside.
  • Combine remaining ingredients in a large bowl. Pour dressing over the top and toss well.
  • Serve immediately or refrigerate until ready to serve.
