- 1 large head of escarole
- 4 slices prosciutto chopped
- 2 cloves garlic minced
- 2 tablespoons extra virgin olive oil
- 2 cherry peppers chopped
- 1/2 cup Italian bread crumbs
- 1/4 cup Romano cheese
- 1 cup chicken broth
- salt and pepper to taste
Wash escarole and chop into large pieces.
Cook escarole in small amount of water for 5-6 minutes until tender.
Saute garlic and prosciutto in EVVO for 2-3 minutes. Add cherry peppers and saute another minute or so.
Add escarole, chicken broth and Romano cheese and mix till blended. Salt and pepper to taste.
Place in casserole dish and top with bread crumbs.
Broil in oven for 3-4 minutes. Serve.
