Sweetheart Bars
These bars are another Lenz favorite. With coconut, chocolate chips and a caramel-like gooey interior, these are scrumptious.

Crust
- 2 sticks butter almost room temperature
- 2 cups flour
- 1 cup brown sugar
Filling
- 4 eggs beaten
- 2 cups brown sugar
- 4 tablespoons flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla
- 2 cups flake coconut
- 1 12 ounce package semisweet chocolate chips
Bottom Crust
Preheat the oven to 350 degrees.
Mix the brown sugar and flour together in a large bowl.
Using a fork, cut the butter into the flour mixture. Some chunks will remain. You do not want to overwork this mixture.
Press mixture into a cookie sheet pan building up the edges around the perimeter. Set aside.
Filling
Beat 4 eggs in the previously used flour bowl.
Add brown sugar, flour, baking soda, vanilla, coconut, and chocolate chips. Carefully pour over the crust, taking care not to disturb the crust.
Bake in hot oven for about 25 minutes until filling looks set.
Cool, cut and enjoy.
