Hot Artichoke Dip
This is wonderful served with tortilla chips - even if you don't love artichokes - you just might like this!

- 1 8 ounce package cream cheese softened
- 1 cup mayonnaise (not Miracle Whip)
- 1 clove garlic minced
- 1 14 ounce can artichokes in water drained and chopped
- 3/4 cup grated Parmesan cheese (3 ounces)
- 1/3 cup green onions with tops thinly sliced
- 1 teaspoon fresh lemon zest
- 1/8 teaspoon ground black pepper
- 1/3 cup red bell pepper chopped
- additional green onions sliced
Preheat oven to 350 degrees.
Combine cream cheese, mayonnaise, and garlic. Mix well.
Drain and chop artichokes. Add artichokes, Parmesan cheese, sliced green onions, lemon zest and black pepper to the cream cheese mixture and mix well.
Spoon mixture into a casserole dish or another oven-safe dish.
Bake 25-30 minutes or until golden brown around edges. Sprinkle with red bell pepper and additional green onions and serve with tortilla chips, veggies, and/or crackers. My favorite is tortilla chips.
