Orzo Rice Pilaf
This simple pilaf comes to life with the toasted orzo pasta. A great side to any meal but I love it with Crispy Chicken Thighs.

- 2 tablespoons butter
- 1/2 cup orzo pasta
- 1/2 cup diced onion
- 2 cloves garlic minced
- 1/2 cup white rice uncooked
- 2 cups chicken broth
- 2 tablespoons fresh parsley finely diced
Melt the butter in a lidded skilled over medium heat. Add the orzo pasta and cook while stirring until golden brown.
Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute more.
Add the rice and chicken broth and mix. Once this comes to a boil, cover and reduce heat to medium low and simmer until the rice is tender and the liquid is absorbed, 20-25 minutes.
Remove from heat and let stand for 5 minutes, then fluff with a fork and serve.
