Dave's Beloved Cucumbers

These marinated cucumbers are crispy, sweet, tangy, and a favorite of Dave's! The cucumbers go so fast that I often reuse the marinade. Just add more sliced cucumbers.

Ingredients

  • 6 cups cucumbers sliced
  • 2 tablespoons kosher salt
  • 2 cloves garlic minced

Marinade

  • 1/2 sweet onion thinly sliced
  • 1 cup sugar or less
  • 1 teaspoon salt
  • 1 cup vinegar
  • 1 teaspoon dried dill

Instructions

  • Slice cucumbers and place in large bowl. Toss with kosher salt and garlic. Let sit for 1-2 hours.
  • Rinse cucumbers well and discard fluid.
  • Mix together marinade ingredients and pour over rinsed cucumbers. Enjoy.
