Orzo Rice Pilaf
This simple pilaf comes to life with the toasted orzo pasta. A great side to any meal but I love it with Crispy Chicken Thighs.
Servings: 4
Ingredients
- 2 tablespoons butter
- 1/2 cup orzo pasta
- 1/2 cup diced onion
- 2 cloves garlic minced
- 1/2 cup white rice uncooked
- 2 cups chicken broth
- 2 tablespoons fresh parsley finely diced
Instructions
- Melt the butter in a lidded skilled over medium heat. Add the orzo pasta and cook while stirring until golden brown.
- Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute more.
- Add the rice and chicken broth and mix. Once this comes to a boil, cover and reduce heat to medium low and simmer until the rice is tender and the liquid is absorbed, 20-25 minutes.
- Remove from heat and let stand for 5 minutes, then fluff with a fork and serve.
