Orzo Rice Pilaf

This simple pilaf comes to life with the toasted orzo pasta. A great side to any meal but I love it with Crispy Chicken Thighs.

Ingredients

  • 2 tablespoons butter
  • 1/2 cup orzo pasta
  • 1/2 cup diced onion
  • 2 cloves garlic minced
  • 1/2 cup white rice uncooked
  • 2 cups chicken broth
  • 2 tablespoons fresh parsley finely diced

Instructions

  • Melt the butter in a lidded skilled over medium heat. Add the orzo pasta and cook while stirring until golden brown.
  • Stir in onion and cook until onion becomes translucent, then add garlic and cook for 1 minute more.
  • Add the rice and chicken broth and mix. Once this comes to a boil, cover and reduce heat to medium low and simmer until the rice is tender and the liquid is absorbed, 20-25 minutes.
  • Remove from heat and let stand for 5 minutes, then fluff with a fork and serve.
