Chocolate Bunny Cake

This eggless cake has been a favorite for decades and irresistible when served with warm fudge frosting.

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 1/3 cup cocoa
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 teaspoon vanilla
  • 2 tablespoons vinegar
  • 3/4 cup oil
  • 2 cups cold water

Fudge Frosting

  • 1 1/2 cup sugar
  • 6 tablespoons butter
  • 6 tablespoons milk
  • 1 cup chocolate chips
  • 1 teaspoon vanilla

Instructions

  • Preheat oven to 350 degrees.
  • Blend together the dry ingredients – down to the baking soda.
  • Mix together the vanilla, vinegar, oil and water and mix well.
  • Combine the wet and dry ingredients together and blend just until mixed.
  • Pour in 9 x 13 pan and bake 30 – 40 minutes or until cake springs back when touched.
  • Frost while still warm.

Fudge Frosting

  • Mix together in a small saucepan the butter, milk, and sugar. Cook on medium low heat until it begins to lightly boil. Cook for 1 minute more and remove from the heat.
  • Add chocolate chips and vanilla and beat until smooth. Pour warm frosting over warm cake and allow frosting to set before serving. Or not! 🙂
