Chocolate Bunny Cake

Chocolate Bunny Cake
This eggless cake has been a favorite for decades and irresistible when served with warm fudge frosting.
Ingredients
- 3 cups flour
- 2 cups sugar
- 1/3 cup cocoa
- 1 teaspoon salt
- 2 teaspoons baking soda
- 1 teaspoon vanilla
- 2 tablespoons vinegar
- 3/4 cup oil
- 2 cups cold water
Fudge Frosting
- 1 1/2 cup sugar
- 6 tablespoons butter
- 6 tablespoons milk
- 1 cup chocolate chips
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees.
- Blend together the dry ingredients – down to the baking soda.
- Mix together the vanilla, vinegar, oil and water and mix well.
- Combine the wet and dry ingredients together and blend just until mixed.
- Pour in 9 x 13 pan and bake 30 – 40 minutes or until cake springs back when touched.
- Frost while still warm.
Fudge Frosting
- Mix together in a small saucepan the butter, milk, and sugar. Cook on medium low heat until it begins to lightly boil. Cook for 1 minute more and remove from the heat.
- Add chocolate chips and vanilla and beat until smooth. Pour warm frosting over warm cake and allow frosting to set before serving. Or not! 🙂
