Utica Greens
This is a unique and tasty side. If you like escarole, you will love this.
Servings: 6
Ingredients
- 1 large head of escarole
- 4 slices prosciutto chopped
- 2 cloves garlic minced
- 2 tablespoons extra virgin olive oil
- 2 cherry peppers chopped
- 1/2 cup Italian bread crumbs
- 1/4 cup Romano cheese
- 1 cup chicken broth
- salt and pepper to taste
Instructions
- Wash escarole and chop into large pieces.
- Cook escarole in small amount of water for 5-6 minutes until tender.
- Saute garlic and prosciutto in EVVO for 2-3 minutes. Add cherry peppers and saute another minute or so.
- Add escarole, chicken broth and Romano cheese and mix till blended. Salt and pepper to taste.
- Place in casserole dish and top with bread crumbs.
- Broil in oven for 3-4 minutes. Serve.
