Utica Greens

This is a unique and tasty side. If you like escarole, you will love this.

Ingredients

  • 1 large head of escarole
  • 4 slices prosciutto chopped
  • 2 cloves garlic minced
  • 2 tablespoons extra virgin olive oil
  • 2 cherry peppers chopped
  • 1/2 cup Italian bread crumbs
  • 1/4 cup Romano cheese
  • 1 cup chicken broth
  • salt and pepper to taste

Instructions

  • Wash escarole and chop into large pieces.
  • Cook escarole in small amount of water for 5-6 minutes until tender.
  • Saute garlic and prosciutto in EVVO for 2-3 minutes. Add cherry peppers and saute another minute or so.
  • Add escarole, chicken broth and Romano cheese and mix till blended. Salt and pepper to taste.
  • Place in casserole dish and top with bread crumbs.
  • Broil in oven for 3-4 minutes. Serve.
