Sweetheart Bars
These bars are another Lenz favorite. With coconut, chocolate chips and a caramel-like gooey interior, these are scrumptious.
Ingredients
Crust
- 2 sticks butter almost room temperature
- 2 cups flour
- 1 cup brown sugar
Filling
- 4 eggs beaten
- 2 cups brown sugar
- 4 tablespoons flour
- 1 teaspoon baking powder
- 2 teaspoons vanilla
- 2 cups flake coconut
- 1 12 ounce package semisweet chocolate chips
Instructions
Bottom Crust
- Preheat the oven to 350 degrees.
- Mix the brown sugar and flour together in a large bowl.
- Using a fork, cut the butter into the flour mixture. Some chunks will remain. You do not want to overwork this mixture.
- Press mixture into a cookie sheet pan building up the edges around the perimeter. Set aside.
Filling
- Beat 4 eggs in the previously used flour bowl.
- Add brown sugar, flour, baking soda, vanilla, coconut, and chocolate chips. Carefully pour over the crust, taking care not to disturb the crust.
- Bake in hot oven for about 25 minutes until filling looks set.
- Cool, cut and enjoy.
