Turkey Tetrazini

This is a tasty dish that is great for using up leftover turkey.

Ingredients

  • 8 ounces spaghetti cooked and drained (I use 12 ounces)
  • 1 tablespoon butter
  • 1 1/2 tablespoon lemon juice
  • 8 ounces fresh mushrooms sliced
  • 2 cups turkey cooked and chopped
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon paprika
  • 2 1/2 cups chicken broth
  • 1 cup milk
  • 3/4 cup parmesan cheese
  • sprinkle of paprika

Instructions

  • Preheat oven to 400 degrees.
  • Saute mushrooms in butter and lemon juice. Toss with cooked spaghetti and turkey and place in a greased 9 x 13 casserole dish.
  • Melt 3 tablespoons butter and stir in flour and spices. Cook for several minutes on medium low heat. Add broth and cook until sauce bubbles and thickens.
  • Pour sauce over pasta mixture and then sprinkle with Parmesan cheese and paprika to garnish.
  • Bake for 25 minutes or until bubbly and beginning to slightly brown. Enjoy.
