Potato Leek Soup

Potato Leek Soup
This recipe comes from my Debra Lenz. One of the best cooks in the family.
Servings: 4
Ingredients
- 1 tablespoon butter
- 8 shallots finely chopped or 1 clove garlic
- 2-3 leeks coarsely chopped
- 2 large potatoes diced
- 2 cups chicken broth
- 1 3/4 cups heavy whipping cream (you may get by with less)
Instructions
- Saute shallots and leeks in butter until tender.
- Add potatoes and broth, simmering until potatoes are tender, 10-15 minutes.
- Add cream and heat until thickened.
- Serve up soup and garnish with fresh parsley.
