Potato Leek Soup

This recipe comes from my Debra Lenz. One of the best cooks in the family.

Ingredients

  • 1 tablespoon butter
  • 8 shallots finely chopped or 1 clove garlic
  • 2-3 leeks coarsely chopped
  • 2 large potatoes diced
  • 2 cups chicken broth
  • 1 3/4 cups heavy whipping cream (you may get by with less)

Instructions

  • Saute shallots and leeks in butter until tender.
  • Add potatoes and broth, simmering until potatoes are tender, 10-15 minutes.
  • Add cream and heat until thickened.
  • Serve up soup and garnish with fresh parsley.
