Shrimp Fajitas
These are the best. Take care not to over cook the shrimp and they will pop in your mouth. The Jalapeno Ranch Dressing is a must!

- 1/4 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
Shrimp Fajita Ingredients
- 1 pound large shrimp peeled and deveined
- 2 bell peppers any color

- 1/4 cup cilantro chopped
- 2-3 teaspoon fresh lime juice
Jalapeno Ranch Dressing

- 4 tablespoons cilantro chopped
- 1 jalapeno seeded and chopped
- 2 teaspoons fresh lime juice
- 1 teaspoon salt
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
Instructions
- In a small bowl, combine marinade ingredients.
- Slice bell peppers and onions the same 1/3 inch thickness and place in a zip lock bag. Pour half the marinade over the top, seal the bag and toss to coat.

- Add shrimp back to the pan along with 1/4 cup cilantro. Squeeze fresh lime juice to taste and toss.
- Serve with warm tortillas and jalapeno ranch.
